Introduction

This soup is great to serve with a Mexican Fiesta or as a stand alone dinner just by adding shredded bonless chicken breast. Ingredients

    2 tsp Olive Oil
    1 Medium onion, chopped
    4 garlic cloves, minced
    2 jalapeno peppers, finley chopped
    1/2 cup dry white wine or 1/2 cup water
    3 cups frozen corn
    5 (14 oz) cans fat free chicken broth
    2 (14 oz) cans diced tomatoes
    2 (10 3/4 oz) cans Campbells Healthy Request Cheddr cheese soup
    1 can blac beans
    8 oz bag reduced fat sharp cheddar cheese
    4 TBSP reduced fat sour cream
    2 tsp cumin
    1 tsp chili powder
    1/4 tsp cayenne pepper

Tips

add shredded bonless skinless chicken breast for an extra hearty soup.


Directions

Heat Olive oil in a 4 qt. stock pot, add chopped onion, garlic, and jalapenos. Cook until soft. Add wine. Bring to a boil. Add chicken broth and cheddar cheese soup and stir. Add all other ingredients and stir. Bring to a boil, stirring occasionally. Reduce heat and simmer aprox. 35-40 minutes.
