Ingredients

    4C black beans (with onions, garlic, tomato)
    3 slices *Homemade Whole Wheat Bread*, crumbed
    10 saltine crackers, crushed
    2 eggs
    1/2C corn
    1Tbsp chili powder
    1Tbsp cumin
    Tony Chachere's to taste

Tips

Our kids say these taste like Doritos!

We used leftover black bean soup from a few days ago.


Directions

mash beans into a semi-paste, (add onions, garlic, tomato - if not using soup) stir into beans.

Mix eggs with powdered spices, mix in with beans. add in bread crumbs and cracker crumbs.

Form into patties. stick on cookie tray in freezer until stiff. Cook on griddle with non-stick spray. until dark brown- light char.
