Introduction

1. Combine first 10 ingredients in a bowl, cover and refrigerate for 1 to 24 hours to marinate.
2. Sautee onions in olive oil for 1 minute on low heat, stiring often. Cover and continue cooking, stiring often until onions are soft but not brown, about 5 minutes.
3. Add tomatoes, potatoes and carrots and 1/2 cup of water. Increase to med. heat. Cover and simmer until meat is done and vegetables are tender, about 25 minutes. Ladle into bowls and garnish with cilantro. Makes 4 servings.

    16 oz Pork Center loin Filet, 1" cubes
    1/2 cup Nonfat Plain Greek Yogurt
    3 T Minced fresh ginger
    3 Cloves fresh garlic
    1 tsp. Gr. Coriander
    1 tsp. Gr. Cumin
    1 tsp. Paprika
    1/2 tsp. Gr. Tumeric
    1/2 tsp. Sea Salt
    1/4 tsp.Gr. Cayenne Pepper
    1 T Olive oil
    1 Yellow onion, halved and thin sliced
    14 1/2 oz. Canned diced tomatoes w/ juices
    10 oz. red potatoes, dices
    3 Carrots, peeled and cut on diagonal, 1/4 " thick
    2 T Coarsely chopped cilantro leaves for garnish.
