Ingredients

    Chicken Breast, skinlees & boneless, cooked
    Celery, raw, 2 cup, diced
    Carrots, raw, 2 cup, diced
    Onions, raw, 2 cup, diced
    Garlic, 3 Tablespoons, minced
    Olive Oil, 1 tbsp
    Chicken Broth, 2 cans (10.75 oz)
    Milk, 2%, 2 quarts
    Fat free half and half, 1 quart
    Basil, fresh 3/4 cup chopped leaves
    Curry powder, 1/2 tsp.

Tips

I received this recipe many years ago from the Chef at Silver Fork Lodge near Alta Ski Lodge at Brighton, Utah.


Directions

Saute celery, carrots, onion, and garlic in olive oil until vegetables are limp. Add cooked, chopped chicken. Cook for 3-4 additonal minutes. Add chicken broth, milk and fat-free cream and simmer for 20 minutes until thickened. Add chopped fresh basil leaves, salt and pepper to taste, curry powder (optional) and simmer for 5 more minutes. If you prefer a thicker soup, blend 3 Tbsp. flour in 3/4 cup water and 2 Tbsp. melted butter. Stir blended flour mixture into soup and stir constantly until thickened. (This will increase the calorie count listed with this recipe).
