Introduction

Heat a large saucepan over medium heat and spray with oil.
Sauté garlic, onion and ginger for a few minutes.

Add broccoli & stock and simmer for 5 minutes or until broccoli is tender.

Add rocket, lemon juice & zest and miso and blend with stick blender until smooth
Adjust seasonings and serve with mint leaves.

Ingredients

    Cleanse your insides with this deliciously healthy light soup.

    Serves 4-5
    Clove of garlic, crushed
    Small red onion, chopped
    1 Knob of ginger
    1 head of broccoli, chopped
    1/2 head red cabbage cut fine
    4 cups vegetable stock
    100g rocket
    Juice & zest of a lemon
    ⅓ cup miso paste
    salt & pepper to taste
    ¼ bunch mint leaves, chopped

    Add broccoli, cabbage & stock and simmer for 5 minutes or until tender.

    Add rocket, lemon juice & zest and miso and blend with stick blender until smooth then add contents of pan & blend together.
    Adjust seasonings and serve with mint leaves & light sour cream to taste.

Tips

Because of quantity may need to blend in stages (mone isn't that big lol). Lovely fresh tasty dish!!
