Ingredients

    Cauliflower, raw, 4.5 cup (remove)
    *Better than Bullion (Chicken), 3 tsp (remove)
    Cheddar Cheese, 1.5 cup, shredded (remove)
    Sour Cream, .5 cup (remove)
    *Hormel Bacon Bits, 4 tbsp (remove)
    *Flour, white, .0208 cup (remove)
    Parsley, dried, 1 tsp (remove)

Tips

no carb thickeners are available. Flour will work in a pinch.


Directions

Dice cauliflower into small pieces and cook until tender. Add 3 c of water, parsley, and better than bullion "chicken" and cook for 10 - 15 minutes.

Add cheese a half cup at a time and stir until melted. Add sour cream and stir until blended. Sprinkle 1 tsp of flour (whole wheat preferred) and wisk soup until it returns to a boil. Allow to boil for 3 - 5 minutes. You wlll see the soup thicken slightly.

Garish with bacon bits before serving.
