Introduction

I just really wanted to use up some leftovers, and what can I say, this turned out great! I just really wanted to use up some leftovers, and what can I say, this turned out great!
Number of Servings: 8

Ingredients

    9 oz of cubed Ham( I used a cured one but any will do)
    1 small baked potato cut into cubes
    3/4 cup of black beans
    2 cups of frozen corn
    3/4 cup celery
    1/3 cup of green onion
    6 cups of water

Tips

This really is a "what can I make with these leftovers" soup. I think anything is the limit. You could make a cream broth with this too, but I really needed to save the calories. some canned tomatoes would work well too in this.


Directions

Mix cubed ham and water in a pot. Boil on a low heat until bubbling and let cook til tender
Add other ingredients and let simmer
add desired spices
I used some ground pepper, garlic and seasoning
This would work great in a crockpot as well
