Ingredients

fresh or frozen shredded hash brown potatoes, 3.5 cup
Egg Substitute 1/4 cup
Cheddar or Colby Cheese, Low Fat, 3/4 cup, shredded
Onions, raw, .5 cup, chopped fine
Turkey bacon, 3 slices crumbled
Fat-Free Half and Half 1 1/2 C
Garlic Powder, 2 tsp
Salt and pepper to taste
Tips
Any spice combination that you like for potatoes can be used. I am watching my sodium intake, so I didn't add much salt. Really hearty casserole.
Directions
Preheat oven to 350 degrees
Spray a 8x8 baking pan with non stick spray
Layer half the potatoes in the bottom of the pan, sprinkle the top with half the bacon, onion and cheese. Repeat with another layer. Mix together fat free half and half, egg substitute and spices. Pour over egg mixture. Cover with foil and bake approx 55-60 minutes. Remove cover and bake an additional 5 minutes until the top of the casserole is golden brown.
