Ingredients

    4-5 oz. Ahi Tuna Steak, thawed
    1 medium green onion, diced
    1/2 cup fresh raspberries
    1/2 cup fresh peach slices
    2 Tbs. Apricot preserves
    2 Tbs. Balsamic Vinegar
    2 Tbs. Extra Virgin Olive Oil

Tips

If using frozen fruit, thaw before use.


Directions

Heat olive oil in saute' pan over medium high heat. Add peaches and green onions and saute' 1-2 minutes until peaches brown. Remove peaches and set aside. Sear each side of tuna steak 2 minutes. Add seasoning if desired. Cover and reduce heat to medium. Heat apricot preserves 30 sec. in microwave until melted. Stir in balsamic vinegar. Pour over raspberries & peaches & stir until all fruit is coated. Plate steaks on bed of rice or quinoa and cover with fruit mixture.
