3oz Roundy's Medium Cooked Shrimp: 50cals
1/2 Cup Black Beans (I use Black & Jalapeno): 130cals
1/4 Cup Green Peppers: 10cals
1/4 Cup Onions: 15cals
6 Cherry Tomatoes: 21cals
3 Cup Spinach: 30cals
Pam Olive Oil or Butter Spray: 0cals
1 McIntosh Apple= 80cals
2 Tbsp Roundy's Organic Creamy Peanut Butter: 180cals
Frank's Hot Sauce: 0cals
Total: 516cals
Directions
1. Weigh 3oz of shrimp, thaw, and remove tail.
2. Chop 1/4 cup of green peppers and onions.
3. In a medium size pan, cook shrimp, green pepps, onions, 1/2 cup beans, and 6 cherry tomatoes.
4. Use spray olive oil or butter as needed.
5. Let ingredients cook for about 5minutes, then add however much hot sauce to the pan; I try to aim mainly on the shrimp.
6. While food is cooking, I slice the apple and put 2 tbsp of peanut butter on a plate.
7. Add spinach to pan and stir into other ingredients. Do this until the spinach has cooked.
8. Poor food into medium size bowl.
9. Add 1 tbsp of blue cheese crumbles if you want which adds 52cals.
