Ingredients

PROTEIN Group 1:
1/2 lb lean pork cut into strips
1/2 block tofu
2/3 c soy sauce
4 cloves garlic
1 tbsp minced ginger
1/4 corn starch, divided
VEGGIES Group 2a:
1 med onion, diced
1 carrot, cut on bias
1 stalk celery, diced
Group 2b:
1 c diced pineapple
1 c red & green pepper
SAUCE Group 3:
3/4 c ketchup
1/4 c red wine vinegar
1-2 big blobs of honey (1.5 oz)
1 tbsp sesame oil
Tips
You could probably make this completely vegan by replacing the pork with all tofu. Or you could use all pork. Or Chicken. Or small blocks of cardboard (its really good...)
The sodium number in the nutritional information is misleading. Its a marinade for the protein and gets poured off before cooking.
Its alot of chopping. I do all the prep ahead - when the pork needs to marinade. Then dinner is pretty quick and the 5 yr old can help (I'm less worried about him at the stove than with a knife.)
Directions
1) Ahead of time, mix Protein Group 1 together using only 1/8 c of cornstarch (half total amount). Set aside for a few hours or overnight.
2) When ready to cook, drain off marinade. Dredge in reserved cornstarch and stir fry in a bit of oil until golden brown ~ 10 min. Set aside.
3) In the same wok, add a bit more oil and group 2a. Sweat until onion goes limp ~3-4 min. Add 2b and return pork/tofu. Cook additional 1 min.
4) Add Sauce Group 3. Cook until pork & veggies are tender ~4-5 min.
Serve over rice.
