Introduction

Seriously yummy and moist! My kids prefer these over full-fat, sugary chocolate chip muffins. Also, very easy to make. If you have kids, let them peel, cut, and mash the bananas. Ingredients

    1.5 cups whole wheat flour
    3/4 cup splenda (if using sugar, it adds about 60 calories and 15g to carbs)
    1/4 cup wheat germ
    3 large bananas, mashed
    1/4 cup Egg Beaters
    1/3 cup applesauce
    1 teaspoon of baking soda
    1 teaspoon of baking powder
    1/3 cup almond slivers
    Ground cinnamon, nutmeg, and cloves, to taste (1/2 to 1 teaspoon of cinnamon and nutmeg, and 1/4 to 1/2 teaspoon of cloves)

Tips

For a crunchy topping, add more slivered almonds on top of the muffins before baking.


Directions

Preheat oven to 350 degrees. Line muffins sheets with paper and spray with non-stick cooking spray.

Peel, cut, and mash bananas (Let a kid do this, with a butter knife and a potato masher).

Add sugar, egg, and applesauce, mixing well between each ingredient (depending on age of child, let pour and/or mix).

Mix dry ingredients in a separate bowel (again, let kids pour or mix).

Pour banana mixture into dry ingredients, and mix till just combined (over mixing will make muffins to dense).

Fold in almonds.

Fill muffin liners 3/4 full.

Bake for 20 minutes or until a tooth pick inserted in the middle comes out clean.
