Introduction

Great lactose-free muffins to satisfy your sweet tooth without wrecking your diet. Great lactose-free muffins to satisfy your sweet tooth without wrecking your diet.

Ingredients

    1 c. uncooked oatmeal
    1 c. orange juice
    1 1/2 c. whole wheat flour
    1 1/2 c. pastry flour
    4 tsp baking powder
    1 tsp salt
    1/2 tsp baking soda
    1 c. sugar
    1 c. applesauce
    3 eggs
    1 - 2 cups dark chocolate chips

Directions

Mix oatmeal & orange juice - let stand while mixing dry ingredients. Add applesauce and eggs to oatmeal mixture. Gradually add dry ingredients. Add chocolate chips last. Fill baking cups quite full.

Bake at 400 degrees for 15 - 17 minutes.
