Ingredients
-
1/2 cup Quinoa (or 6tbsp of cream of wheat)
1 head of cauliflower steamed
3 cups of carrots cut into chunks & steamed
4 tbsp kraft cheez wiz
4 cups water divided
1 boulion packets or cubes
1 tbsp Epicure 3 onion dip mix
Tips
Directions
first off you'll want to grind the 1/2 cup of quinoa (unless you want to use the cream of wheat) - set aside
cut up a head of cauliflower and 3 - 4 large carrots pealed. Steam both vegetables till quite soft. let cool for 5-10 min.
While the vegetables are steaming or cooling, add
3 3/4 cup of water, quinoa, 4 tbsp cheeze wiz, boulion and the spices to the crockpot and turn on high heat.
When the vegetables have cooled to a moderate temp to safely put in a blender, add 1/4 cup of the water (too much water in the blender tends to leave more chunks. You want a nice smooth texture to give the illusion of "cream".) When completely smooth using a wire whisk gently stir into the crockpot mixture. let sit for another 30 min on high heat turn down to "keep warm" till ready to serve.
