Ingredients

1 lb. bone-less skinless chicken thighs
1/4 C fresh lime juice
1 1/2 C chicken broth
2 cloves garlic, finely chopped
1/4 tsp black pepper
2 T butter or margarine
1 C uncooked instant rice
optional: chopped fresh parsley
Tips
We have also used boneless, skinless chicken breast, but it tastes much drier in this recipe (we probably cooked it too long!).
Directions
1. Place chicken in 3- to 4-quart slow cooker. Add remaining ingredients except rice and parsley
2. Cover and cook on low heat for 8-10hrs. During last 15 minutes of cooking, stir in rice.
