Introduction
This recipe is the result of a few muffin recipes that I cobbled together with what I had on hand. Very moist and tasty--good for snack or breakfast--and easy to make. Ingredients

Into Large size Bowl One mix:
1 cup white whole wheat flour
1 Tbsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1 tsp cinnamon
1 tsp nutmeg
Into medium size bowl mix
1/2 cup blueberries
1/2 cup mashed banana
1/4 cup sugar
1 large egg
1/2 tsp vanilla
1/4 cup applesauce
Resrve the walnuts
Tips
These freeze well.
Directions
Turn on oven to preheat to 350 degrees F. Line muffin pan with paper liners or grease.
Put dry ingredients (except sugar and walnuts) in large bowl. Use a whisk to blend them and break up any clumps.
In medium bowl, mix fruits, "wet" ingredients and sugar. When thoroughly mixed, make a well in the dry ingredients and add the wet. Mix together. It's okay if the batter is not perfectly mixed--over stirring will toughen the muffins. Put batter into muffin cups. (Batter is a bit thick because of the gelatinous nature of mashed bananas.)
Sprinkle walnuts on top. Bake time depends on oven. Expect muffins to take about 15 minutes but check at 12. They're ready when a toothpick inserted in the center of a muffin comes out clean. Let cool and enjoy.
