Introduction

Like the soup, but lighter! Like the soup, but lighter!

Ingredients

    6 oz chicken breast, chopped small
    3 shallots, minced
    3 cloves garlic, minced
    3 tbsp cilantro, minced
    1 tsp ginger, minced
    .5 lime, juice
    .5 c light coconut milk
    .25 c chicken broth

Tips

To make your life easy, throw the shallots, garlic, cilantro, etc in a spice grinder or (if you're making a big batch) food processor.


Directions

Mix chicken with everything BUT the coconut milk and chicken broth. Heat a nonstick pan, add chicken. When it's sauteed (takes not even a minute), add coconut milk and chicken broth; let simmer. Serve however you like! I prefer it either as a lettuce wrap or with rice.
