Ingredients

    0.5 cup mashed bananas (about 2 medium)
    2 eggs
    0.5 cup milk
    0.5 tsp baking soda
    0.5 tsp baking powder
    1 tsp vanilla
    0.5 tsp cinnamon
    0.5 tsp nutmeg
    0.5 tsp cloves
    1.25 cup rolled oats (not instant)
    0.25 cup chopped nuts (optional).

Tips

You can switch the banana out for any kind of mashed fruit or vegetable. Pumpkin or apples work very well.


Directions

Heat the oven to 350 F.
Mash the bananas, then beat in eggs and milk.
Add baking soda, baking powder, spices and vanilla.
Stir in the rolled oats. (Add nuts if desired). Mixture should be runny.
Grease a casserole dish and pour the mixture in. Bake covered (i.e. aluminum foil or lid) for 30 minutes. Remove lid and bake another 15 minutes, or until the centre is solid and the edges are golden brown.
