Ingredients

    3lbs. chicken thighs, boneless & skinless
    2 tbs. olive oil
    2cups chopped onion
    1.5 cup chopped bell pepper
    1 cup fresh chopped parsley
    1.5 cups chopped green onions
    1 tbs. chopped garlic
    4 cups water (from boiled chicken, skimmed)
    2 lg. cans stewed tomatoes
    2 tbs. soy sauce
    1 tsp. tobasco sauce
    2 packages lil' smokies beef sausages, pre-boiled

Tips

Serve over rice.


Directions

Simmer chicken till cooked through. Remove, strain stock and save. Heat oil, saute onions, bell pepper, parsley, and green onions until onions are clear. Add garlic and stock. Stir in tomatoes and soy sauce, bring to boil. Add chicken and sausage, return to boil. Simmer, covered at least one hour.
