Introduction

This recipe takes a lot of time, but very little effort. Brother-In-Law nicknamed this the sugar souffle because of how much sugar is in this recipe. I revised it and attempted to cut out more than half of the sugar and butter called for. The first 5 ingredients are the souffle part and the last five ingredients is the crumble topping. Ingredients

    Souffle
    5 lbs Sweet Potatoes
    3 Eggs, beaten
    1/2 stick Butter
    1 3/4 tsp Salt
    2/3 C. Brown Sugar - Golden

    Topping
    1/2 stick Butter, chilled & slightly softened (not melty)
    3/4 C. Golden Brown Sugar
    1/3 C. Oat Flour
    1/2 C. Chopped Pecans
    1/2 C. Coconut, Macerated (sweetened)
    1 tsp. Cinnamon
    1/2 tsp. Nutmeg (optional)



Tips

Tip: THESE POTATOES ARE VERY HOT WEAR GLOVES when removing skin. Also, prior to baking, score potatoes around their middle so that when done in oven you can cut in half and squeeze potato out of skin with hands. I have found this to be the simplest, fastest way to do this.


Directions

Put sweet potatoes, scored around middle, in oven on sheet pan (cover with foil) bake till soft 90 mins - (depending on how large potatoes are - prefer the bigger the better for this recipe) then remove skin.

Add ingredients into mixer or bowl and blend together.
Pour mixture into pan.

While sweet potatoes are cooking prepare topping. mix together all ingredients until well incorporated and is "crumbly." Layer across the top of the souffle.

Bake 60-75 minutes at 350 degrees.
