Introduction

I love lentils and beans and wanted to make a high protein burrito filling. This was my experiment and we were pleased.

Number of Servings: 6

Ingredients

    * Lentils, 150 grams
    * 1 diced sweet onion
    * *1/2 medium bell pepper , I used yellow diced
    * 1 red chile, diced and seeds removed
    * 1/2 cup frozen corn kernels (or canned)
    * 1 can black beans, rinsed and drained
    * taco or tex-mex seasoning of choice (about 2-4 tsp)
    * 1 small can (about 1/4 cup) Tomato Paste
    * Water,enough to cover lentils
    * 150 grams Lean bacon cubes
    * 1 medium Carrot -chopped, F
    * Freshly ground pepper Pepper, black,
    * Salt
    * *Whole Wheat Tortilla, 6 serving
    * Low-fat shredded cheese to sprinkle on top

Directions

In a thick bottomed pan, such as a Dutch oven, brown the bacon pieces on high until crisp and browned.

Turn heat down to medium and add onion & bell pepper. Stir around and cook for 3-5 minutes until soft.

Add lentils and stir around. Cook for about 1 minute.
Add water enough to cover lentils well.
Add tomato paste and all other ingredients (minus cheese). Stir together.
Check water level that it covers everything.
Turn heat down to low and add lid. Simmer for about 15 minutes Checking every so often for water levels.

Serve hot on a whole grain tortilla and dress as desired.
I used salsa and low-fat shredded cheese (added to nutritional info) to make smothered burritos.
