Introduction
These are fabulous meatballs wrapped in cabbage, then smothered in a tomato sauce. Delicious! These are fabulous meatballs wrapped in cabbage, then smothered in a tomato sauce. Delicious!Number of Servings: 6
Ingredients

2 lb ground beef
1 box beef Rice a Roni
1 egg
1 head cabbage
1 Tbsp onion flakes
salt and pepper to taste
1 can tomato soup
2 1/2 C water
Directions
Combine ground beef, egg, the rice from the Rice a Roni box (do not use seasoning packet yet), onion flakes and salf and pepper. Combine it with your hands really well until mixed.
Remove leaves off of cabbage (You will need 6 or 7, depending on how many meat balls you have) Place on microwave safe plate and then lay a damp paper towel over the top. Microwave for 1.5 minutes, until cabbage is soft and pliable.
Form meatball. (about the size of a small fist) Wrap each meatball in cabbage leaves. (You may have to use more than one leaf to cover it completely). Place wrapped meatball in a dutch oven. Continue until all your meat mixture is gone.
In the same bowl you mixed your meat in, pour 2.5 cups water, tomato soup and the seasoning packet that came with your Rice a Roni. Mix well. Pour over meatballs. Place dutch oven into the oven and bake 1.5 hours or until meatballs are completely cooked. (you may want to cover the meatballs with a lid while baking.)
Serving Size: Makes 6 large meatballs
