Introduction

Ingredients

    300g minced beef, low fat
    1/2 onion, finely chopped
    2 cloves garlic, finely chopped, minced or crushed
    1 medium carrot, grated
    2 tsp coconut oil
    1 can good quality tomatoes
    1-2 tbsp tomato paste if you like it
    soy sause to taste
    1/4 cup pesto
    1/2 cup red wine if you want, water or stock otherwise
    salt, ground black pepper, basil and oregano to taste.
    1/4 cup grated cheese


Tips

Add some grated cheese on top when serving. I added thin strips of zucchini to the boiling pasta ~30 seconds before draining to minimize the wheat content. If gluten is a problem I would use only zucchini with some green cabbage.


Directions

Fry onion and garlic on low to medium heat in half of the coconut oil, add grated carrot when onion is soft, let fry for a few more minutes. Put to the side.
In hot pan with the rest of the coconut oil, brown the minced beef. Salt and pepper to taste.
Add onion, garlic, carrot and tomatoes and let it simmer for at least 15 minutes. Add pesto, tomato paste, wine and spices to your taste.

Serving Size: 3 large servings or 4 smaller
