Ingredients

    Southwest Pinto Bean Burgers and Chipotle Sauce

    Burgers
    1/2 cup onion, diced
    1/2 cup whole grain breadcrumbs
    1/4 cup cilantro, chopped
    2 Tbsp jalapeņo pepper, minced & seeded
    2 Tbsp non-fat Greek yogurt
    1 tsp hot pepper sauce
    1/2 tsp ground cumin
    1/4 tsp freshly ground black pepper
    1/8 tsp salt
    1 large egg or 1/4 cup egg substitute
    1-15 oz. can pinto beans, drained
    1-8 3/4 oz. can whole-kernel corn, no salt-added, drained

    Chipotle Sauce
    1/4 cup non-fat Greek yogurt
    1 tsp canned chipotle chile in adobo sauce, minced


Directions

Combine the first 10 ingredients in a large bowl. Add pinto beans and corn; partially mash with a fork. Mix together. Divide bean mixture into 4 equal portions, shaping each portion into a 3 1/2-inch patty, and refrigerate for 10 minutes.
Chipotle sauce, combine non-fat Greek yogurt and 1 teaspoon minced chipotle in a small bowl; set aside.
Coat a large nonstick skillet with cooking spray. Add patties to pan, over medium-high heat, cook 4 minutes on each side or until thoroughly heated. Serve on your favorite grain drizzled with chipotle sauce or on a whole wheat bun with lettuce and tomatoes.
