Ingredients

3 oz. lean pork
1/4 tsp. chili powder
1/4 tsp. cumin
1/4 tsp. paprika
1/4 tsp. black pepper
2 tbsp. low sodium salsa (mild is best for families or guests)
1/4 cup pineapple chunks
1/2 tbsp. fresh cilantro (coriander)
1/4 tsp. oregano
1/3 tbsp. olive oil
Directions
In a zip lock bag, add cumin, paprika, chili powder, black pepper, and extra virgin olive oil. Mix it all up and then add the pork and rub it all into the pork, let it sit in the fridge for about a half hour.
Preheat a nonstick skillet to high heat.
Brown the pork on all sides. Do not let the pork cook through.
Reduce heat to low, add salsa, pineapple (with juice), cilantro and oregano.Sauté pork about until done. Pork should be cooked through but tender, and sauce will thicken.
Cook Rice and serve the pork and sauce over the rice.
Serve with 2 cups mixed salad greens with 2 tbsps. lowfat or non fat dressing.
