Ingredients

    1 pound lean beef stew meat, cut into 1/2 in. cubes
    1 can (14.5 ounces) diced tomatoes, undrained
    1 small onion, chopped
    1 red pepper, chopped
    1 green pepper chopped
    1 tablespoon curry powder
    1/2 teaspoon salt
    1/2 cup raisins
    1/2 cup peanuts
    1 cup uncooked rice

Directions

In a large saucepan, combine the first seven ingredients. Bring to a boil. Reduce heat, cover saucepan, and simmer for 1 1/2 to 2 hours or until meat is tender. Serve over rice. Garnish with raisins and peanuts if desidred.
