Ingredients

1.5 oz. imitation crab meat
.5 tablespoon fresh lime juice, or to taste
.5 oz. creme fraiche
2 teaspoons Creole or other coarse-grained mustard
2 slices french bread
1 tsp. canola margarine
.25 oz. parmesan cheese
Directions
Preheat broiler.
Cut up crabmeat, add half of lime juice and toss to combine.
In a small bowl whisk together remaining lime juice, creme fraiche, and mustard until smooth. Pour sauce over crab and toss to coat. Season crab mixture with salt and pepper and chill, covered, 30 minutes.
Lightly toast bread and spread with margarine. Spoon crab mixture on one piece of bread and place on baking pan. Sprinkle with parmesan. Broil sandwich about 3 inches from heat until cheese is melted and golden, 1 to 2 minutes. Top with second slice of bread.
