Ingredients

    1 lb ground buffalo meat
    5 cups pinto beans
    1 green pepper, chopped
    1/2 cup raw onion, chopped
    1/2-1 cup salsa, depending on taste
    3 tbsp chili powder, depending on taste OR
    1 red chili pepper, dried and chopped
    1 tbsp onion powder
    2 tbsp pepper
    Salt to taste

Directions

Soak the pinto beans overnight.
Place the beans in a pot and boil for an hour making sure that there is water continually above the beans in the pot. Stir often.
Mix all the dry spices together with the meat.
Brown the meat.
Place the meat into the pot of beans and boil 30 min.
Cook the peppers and onions.
Add the salsa, onion and peppers to the pot. Stir.
Cook until most the water has evaporated out.
If you like, add hot sauce.
Serve with cheese.

    I made it with canned pinto beans, I made sure I rinsed them well to get rid of the sodium. I also added some diced celery to the mix and served it with 1 tbsp of 0% fat Greek yoghurt instead of the cheese. - 6/20/08
