Ingredients

    2 cups brown rice
    1 can corn
    1 can black beans
    1 jar salsa
    1 1lb. of ground beef
    1 packet of taco seasoning
    1 bag of shredded cheddar cheese

Tips

This is one of my husband's favorite meals. To make less fatty, you can use chicken instead of beef and use low fat cheese. Or for a vegetarian option, you can cut out the meat altogether, just add some seasonings to the rice mixture to give it enough flavor.


Directions

Cook brown rice according to directions. Preheat oven to 350. Spray a 3 qt. casserole dish with Pam. Brown beef in skillet and add taco seasoning (according to directions). In a large bowl, mix rice, seasoned beef, corn, black beans, and salsa together. Pour mixture into casserole dish and cover with cheddar cheese. Bake in oven for 20-30 minutes. Enjoy!
