Number of Servings: 6

Ingredients

    4 carrots peeled and grated
    2 celery stalks and 2 scallions green included (spring onions) finely chop
    ½ cup roasted peanuts
    ½ cup raisins or currants
    1 tbsp poppy seeds
    3 tbsp lemon juice
    1 tsp prepared mustard

Directions

In a big bowl mix the lemon juice and mustard. Then add, Finely grate carrots, chopped celery and chopped spring onions, peanuts and raisins then poppy seeds mix well serve.

Serving Size: 1/2 cup per person serves 6
