Ingredients

Haddock, 2 lbs
Salt, 1 tsp (plus to taste in sauce)
Butter, 3 tbsp
Onions, raw, 1/4 cup, chopped really fine
Dry Mustard Powder, 1 tsp
Heavy Whipping Cream, 2/3 cup, fluid
Whole Milk, 1/3 cup
Cheddar Cheese, 1/2 cup, shredded
Monterey Jack Cheese shredded, 1/2 cup
Paprika, 1/4 tsp
Tips
Very addaptable. Can add shrimp, mushrooms etc. Original recipe calls for 3 tbsp of flour and 1/8 tsp of black pepper. I don't eat either but you should feel free!
Directions
Pre-heat the oven to 350 F.
Butter a cassarole dish big enough for the fillets.
Rinse and pat dry the fillets then season with the teaspoon of salt. Arrange in the cassarole dish.
In a skillet melt the butter over a low heat. Saute the onion until golden and soft. Add cream, milk, mustard and salt. Stir continually until simmering. remove from the heat, add the cheese and keep stiring until melted.
Pour over the fish and sprinkle with the paprika.
Bake until brown and bubbly.
