Introduction

Ingredients

    1 small Onion, chopped
    2 cloves Garlic, crushed
    2 fl oz Coffee liquor
    3 fl oz Water
    190 grams Tomato Sauce
    2 tbsp Cider Vinegar
    2 tsp Paprika
    1 tsp Chili powder
    1 tsp Salt
    1 medium Whole tomato, chopped
    40 grams Green bell pepper, chopped
    1 tbsp Olive Oil

Tips

Serve on potatoes, baked with a skin. Bake potatoes in the oven for healthier recipe, or cook on the pan with olive oil until they are golden brown and tender. 200 grams of potatoes makes one serving. Serve on the plate with side of 1 cup of chopped lettuce and 1 tomato.


Directions

To make sauce, heat oil in a saucepan, add he onion and cook over a medium heat, stirring occasionally, for 5 mins. Add garlic and stir for 30 sec. Add the liquor and water and bring to boil. Add tomato, tomato sauce, vinegar, chilli and paprika, reduce heat and cook uncovered for 10 mins, until the sauce is thick.
When sauce is cooked, use blender to blend it smooth and return it back to heat for 2 mins.
