Tips
If you are cooking for three people, you can extend the recipe by adding half a can of drained black beans
Directions
heat pan, add evoo to coat
add red pepper & onion, cook 1-2 minutes
add turkey & cook for 3-5 minutes
add garlic & spices, cook for 2 minutes
add corn & salsa, cook until turkey is cooked through.
serve on warm corn tortillas
(you can top with lettuce, cheese, or sour cream if desired, but make sure to add to your calorie count)
