Introduction

Granny never measured and used the bacon drippings and full fat products to make this wonderful cornbread. We have done it a little differently, but the taste is still great! Number of Servings: 6

Ingredients

    1 1/2 cups corn meal (yellow or white is ok)
    3 tablespoons all-purpose flour
    1 teaspoon salt
    1 teaspoon soda
    2 cups reduced fat buttermilk
    1/4 cup Egg Substitue (such as egg beaters) or the equivilant to one egg.
    2 tablespoons vegitable oil (canola is ok too)

Directions

Sift together dry ingredients; add buttermild, egg, and oil. Mix until dry ingredients are just moist - do not over mix. Pour into a greased, hot 10-inch oven-proof skillet.
Bake in preheated hot oven (450) for 20 - 25 minutes. Serve warm from the oven (6 servings).

    Tasty, but my boys were hoping for something a little sweeter. Next time I may try to add a little sweetner to see what happens. Otherwise a very nice and easy cornbread recipe! - 5/1/11

    Incredible!
    I made this same cornbread earlier this week. Turned out very light and fluffy. I used white corn meal. It may seem like there is too much buttermilk when you put it in the oven but it comes out great! - 3/12/09
