Introduction

Good, healthy cookies. My wife likes them with peanut butter, I like them just as they are, not too sweet, but sweet enough. And filling! Good, healthy cookies. My wife likes them with peanut butter, I like them just as they are, not too sweet, but sweet enough. And filling!
Number of Servings: 20

Ingredients

    1 cup fresh or canned pumpkin
    1 small banana, mashed
    3/4 cup date sugar
    3/4 cup whole wheat flour
    1/2 teaspoon baking soda
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    3 cups quick oats, not instant
    1 cup raisins

Directions

Combine the pineapple, banana and pumpkin and mix well.
In a separate bowl, mix remaining ingredients.
Add the pineapple, banana, pumpkin mix to the dry ingredients and mix into a batter.
Preheat oven to 350.
Using a #2 scoop, put cookie dough on baking sheet and flatten out a bit. (they kind of look like little brown hamburgers)
Baked for 10-15 minutes, depending on your oven.
Let cool and enjoy!
