Ingredients

    1 lb ground turkey
    1 can dark red kidney beans, drained & rinsed
    14 oz. can diced tomatoes
    10 oz. can rotel tomatoes
    1 pkg.taco seasoning
    12 6" corn tortillas
    4 oz. shredded cheddar cheese

Directions

Preheat oven to 250. Brown meat; drain & rinse. Add beans, tomatoes and seasoning. Reduce heat; simmer 5 minutes. Spray 9x13 casserole with cooking spray. Cut tortillas in 1/2 and place 1/2 of them in bottom of dish overlapping. Spoon 1/2 meat mixture over tortillas. Cover with remaining tortillas & then beef mixture. Top with cheese. Cover and bake 25 minutes.
