Ingredients

    I fillet frozen or fresh Swai (or 2 tilapia fillets)
    3 cups Diced Eggplant (peeled or unpeeled)
    1 can del monte diced tomatoes and jalapeno
    1 cup Onion
    1 cup mushrooms
    1 cup spinach
    Spices to taste

Tips

If the fish is frozen, it takes longer to bake
Tilapia takes less time to bake. Baking time depends on your oven and the dish you use. I use the flatter 22 oz pyrex dish. You can use your choice of vegetables.


Directions

Pre heat oven to 350
Spray 2 quart baking dish with cooking spray
Salt and spice fish and add to dish
Add cut vegetables
Add drained tomatoes
Cook for approx 30 minutes until fish flakes in the center
