Ingredients

    2 cups cooked brown rice and mahoghany and wild rice mixture
    2 tablespoons pine nuts
    1 large tomato, seeded
    1 yellow bell pepper
    1tsp. Basil
    8 artichoke hearts
    3 cloves garlic
    1 tbl. Olive oil
    Cayenne pepper to taste
    Salt to taste

Tips

I added mahoghany and wild rice mix to my brown rice. It made it beautiful and added texture.


Directions

Cook brown rice according to instructions on pkg. add oil to pan and put in chopped bell pepper cook till tender. Add artichoke hearts pine nuts, garlic and basil. Cooked till pine nuts start to turn brown. Add tomatoes and brown rice, let flavors mingle for a few min. Add salt and cayenne to taste.
