Ingredients

    Spinach, frozen, 1 package (10 oz)
    Milk, canned, evaporated, 12 fl oz
    Cottage Cheese, Nonfat, .5 cup (not packed)
    Parmesan Cheese, grated, 0.5 cup
    Egg, fresh, 2 large
    Pepper, black, .25 tsp
    Salt, .5 tsp
    Pie crust, frozen, ready-to-bake, 1 crust, single 9"
    *Best of the Egg--Egg Substitute, 0.5 cup
    Onions, raw, .25 cup, chopped
    Mushrooms, fresh, .5 cup, pieces or slices

Tips

I added used white pepper instead of black pepper and a blend of no salt spices for additional flavor.


Directions

1. Preheat the oven to 425 degrees
2. Ina medium bowl, whisk the milk cottage cheese Parmesan, egg, egg whites, salt and pepper.
3. Place the pie plant on a baking sheet, spread the spinach, onions and mushrooms over the pie crust, then pour the filling over the mixture. Bake for 15 minutes until the filling is set; reduce the oven temperature to 350 degrees and bake 20 minutes longer. Let cool about 10 minutes before serving.
