Ingredients

    1 1/2 cups popped amaranth
    7 1/2 cups rolled oats
    1 1/2 cups unsweetened coconut
    1/4 cup poppy seeds
    1 cup sesame seeds
    1 cup flaxseed meal
    1 cup chocolate or carob chips
    1 cup brown sugar
    1 cup honey
    1 cup water
    1 1/2 cups peanut butter
    3 TBSP vanilla

Tips

This recipe is so versatile- Just make sure you have around 13 1/2 cups of dry ingredients (with around 6-8cups being oats), and 4 1/2 cups wet ingredients.
Nuts, cereals, dried fruits, any seeds, etc. are fantastic for this bar


Directions

To pop amaranth, heat a skillet until it gets good and hot, place 2 TBSP amaranth in the pan and put the lid on. If the pan is hot enough, it will start popping almost immediately when you put it in the pan. Pop for about 30 seconds, shaking the pan the whole time. Be careful, it burns VERY quickly.)
In a sauce pan, heat the water, brown sugar, and honey until it reaches a boil. Remove from heat, and add the peanut butter and vanilla.
Incorporate into the dry ingredients.
Add chocolate chips last (otherwise, they'll likely melt), mix everything very well.
Put mixture into cookie sheets or large pans that are either greased or nonstick, and pat down very well.
Place in freezer for 5-10 minutes (or fridge for 10-20), and cut into bars.
