Ingredients

    1 cup Special K Protein Plus cereal
    1/2 cup 1% cottage cheese
    1 scoop vanilla whey (Jay Robb)
    1/2 cup canned pumpkin
    1/4 tsp pumpkin pie spice
    1/2 tsp cinnamon
    1 tsp vanilla extract
    2 tbsp measures-like-sugar stevia (or to taste)

Directions

Preheat oven to 350F. Put all ingredients in a bowl and stir well. Pour mixture into a lightly greased pan and spread evenly. Bake for 25 minutes; let cool for at least 20 minutes before cutting (or enjoy it gooey and warm!)
