Introduction

A non-dairy alternative to regular buttermilk pancakes. A non-dairy alternative to regular buttermilk pancakes.
Number of Servings: 14

Ingredients

    2 Eggs
    2 Cups (minus 2 Tbs) Light Soy Milk
    2 Tbs White Vinegar
    4 Tbs Vegetable oil
    2 Cups All Purpose Flour
    2 Tbs Sugar
    2 teas Baking Powder
    1 teas baking soda
    1 teas salt

Directions

First measure 2 Tablespoons regular vinegar into measuring cup, then add soy milk to measure 2 cups. Let sit until "curdled", then add all ingerdients in order.

Pour by 1/4 Cupful into prepared skillet or griddle. Cook until bubbles form, turn and cook other side until golden brown.

Serving Size: makes 14 pancakes using 1/4 Cup batter each
