Introduction

Number of Servings: 2

Ingredients

    About 2 cups of chopped brussel sprout greens
    1/4 cup of shelled pastachios (yep, you saw that right, pastachios)
    1 tsp onion powder (would have used a fresh onion if I had it)
    2 tsp curry powder
    a little water

Tips

I used the big dark leaves from the plant, not the little buds. Not terribly easy to find, but if you grow your own, it gives you something to do with the leaves as well. Would also work well with mustard greens or another dense green but probably not so well with spinach.


Directions

Cut the tough center rib from the greens.
Rough chop greens.
Bring olive oil to heat on stove.
Add greens and toss to coat lightly.
Add about 1/4 inch of water in the bottom of the pot.
Add curry and nuts and combine well.
Cover and simmer 15-20 minutes until tender and tasty.

Serving Size: makes 2 nice sized vegitable side dishes
