Introduction

Number of Servings: 6

Ingredients

    2 cups rice
    4 cups water
    can of Rotel tomatoes with green chilie
    can of corn - drained
    can of pinto beans - drained

    Salsa of your choice - I like the Lisano sauce that I get from Costa Rica

Tips

Good to make up a batch and pack for lunch or as a side dish


Directions

Cook the rice according to directions. I used my Pampered Chef Rice Cooker and do it in the microwave and then use the container to mix in other ingrediants and store.

Once the rice is cooked, mix in the other ingredients. Top with salsa or your favorite hot sauce when you serve this up.

Serving Size: Makes about 6 servings
