Ingredients

    15-18 leeks, cleaned, sliced into 1/2" pieces. (Including the green parts all the way to the top.)
    6-8 Potatoes, 2/3rds diced finely, 1/3rd diced in bite-sized chunks
    6-8 Onions (white or yellow)
    vegetable broth or chicken broth

Tips

You can easily add cream at the end to anyone's portion who prefers a richer flavor.


Directions

Sautee leaks and onions. (You can add butter and saute them if you want more flavor, but I don't.) When they've wilted well, add them to a big pot. Add in broth and bring to a boil. Add potatoes and simmer until the potatoes have broken down. If you like a smoother soup, blend 3/4 of the soup and then return it to the pot. It'll leave you with a solid base consistency but still a few strands of leeks and chunks of potato for texture. This is a very hearty soup.
