Ingredients

    4 tsp olive oil
    3 cup onions, thinly sliced
    2 Tbsp garlic, chopped
    12 oz cooked shrimp, tails off
    1/3 cup balsamic vinegar
    1 cup fat free chicken broth
    12 Spanish olives with pimento, roughly chopped
    4 Tbsp capers, rinsed and drained

Directions

In a skillet on medium heat, cook onions and garlic in olive oil until softened. Add shrimp, vinegar and chicken broth and bring to a boil. Add olives and capers, and cook until liquid thickens slightly.

This is great served over whole wheat linguine!

    Good
    This was ok. The shrimp gave it a very weird flavor... I would have LOVED it with chicken or even just without the shrimp (just the other ingredients). After picking around the shrimp though, I did enjoy it. My 2 year old did not. - 6/2/09
