Introduction

Ingredients

    2 cups white flour
    1/4 tsp salt
    1/4 tsp baking soda
    1 tsp cinnamon
    1/4 tsp nutmeg
    2/3 cup soft butter
    1 large egg
    1/4 cup of honey
    1 medium banana
    1/4 cup unsweetened applesauce
    2 cups granola (no sugar added)

Tips

You can enhance the flavor by drizzling honey on right out of the oven and let air dry overnight. When you package these, they will stay moist at least two weeks.


Directions

Mix dry ingredients, set aside. Mash banana. Beat soft butter, egg, honey, unsweetened applesauce and mashed banana until creamy. Add dry ingredients and beat until thoroughly combined. Stir in granola. Cover and chill dough 1 hour. Drop by rounded teaspoonfuls onto parchment lined or greased cookie sheet. Bake at 350 for 12 to 15 minute. Done when bottoms are brown. Yield 3 dozen.
