Ingredients

    1 egg, beaten
    2 T sugar
    2 T cornstarch
    1 1/4 cup vanilla coconut milk (I used Silk brand)
    1/2 T butter
    1/2 tsp vanilla
    1 large banana, sliced
    2 large rectangular graham crackers

Directions

Collect 4 small dishes, ~1 cup capacity. Crumble a square of graham crackers into each dish and set aside.

Combine sugar and cornstarch in a medium sauce pan. Place over medium heat and SLOWLY add cold coconut milk, stirring constantly. Continue stirring until mixture is thickened. Remove from heat and add SMALL amounts of the thickened cream to the egg, stirring constantly to prevent the egg from cooking. After you have added ~half the cream to the egg, reverse the process and pour the egg mixture back into the sauce pan, stirring constantly. Return to heat, bring to a boil, reduce heat, and cook 2 minutes. Add butter and vanilla; stir to combine.

Spoon cream mixture on top of crumbled graham crackers, layering with sliced bananas. Refrigerate 30 minutes.
