Ingredients

Asparagus, fresh, 11 spear, medium (5-1/4" to 7" long)
Mushrooms, fresh, 2 medium
Red Ripe Tomatoes, 1 Italian tomato
Onions, raw, 1 small
Egg, fresh, 1.5 cup (4.86 large eggs)
Milk, 1%, .25 cup
Feta Cheese, .5 cup, crumbled
Directions
slice one small onion into thin slices
roughly chop 11 asparagus spears
dice one Italian tomato
chop 2 shitake mushroooms
spray non stick fry pan with oil spray
Mix together 1.5 cups of eggs, 1/2 cup of fresh mushrooms, 1/4 cup milk
Fry asparagus, onion and mushrooms for 3 minutes until tender. Ass tomato and fry one minute longer.
Add egg mixture and fry for 12 minutes with pan covered. Preheat broiler
Remove covder from frying pan and place in oven for three more minutes
Garnish with salsa orsliced tomatoes
Serving Size: makes four pieces in a standard fry pan
