Introduction

I really wanted to make peanut butter cookies but I didn't want to use the traditional recipe found on the back of a peanut butter jar. Instead I decided to come up with a healthy alternative. I would add chocolate chips, carob chips, more honey, or brown sugar if you like your cookies a little sweeter. They taste really yummy either way. Enjoy. Ingredients

    Dry Ingredients:
    - 3/4 cup All-Purpose Whole Wheat Flour (adjust depending on moisture of batter)
    - 3/4 cup 100% Whole Wheat Oats
    - 1/2 tsp salt
    - either 1/2 tsp baking soda or 1 and 1/2 tsp baking powder
    - optional: 1 tsp cinnamon (I used it and it tastes really good)

    Wet Ingredients:
    - 1 cup Kraft Smooth 25% Less Fat Peanut Butter (adjust according to desired taste)
    - 1/2 cup liquid honey (I would add another 1/4 cup unless adding chocolate chips)
    - 1 egg (I substituted the egg with 1 Tbsp ground flax soaked in 3 Tbsp water)
    - 2 tsp vanilla
    - optional: 1/3 - 1/2 cup chocolate chips or carob chips (similar to chocolate chips but made out of carob)

Tips

As mentioned in the ingredients since I didn't have an egg I used 1 Tbsp Ground Flaxseed soaked in 3 Tbsp water. Also if you're vegan as opposed to vegetarian you can sub the honey for brown sugar or regular white sugar.


Directions

Preparation
1. Preheat oven to 375
2. Combine dry ingredients
3. Add wet ingredients
4. Mix together
5. Make approx. 1.5 inch balls and place on cookie sheet sprayed with a little Pam (You can make them smaller if desired)
6. Flatten with a fork
7. Bake for 8 - 12 min (The edges should be slightly brown but seeing as honey browns faster be careful not to burn)
8. Enjoy :)

Serving Size: Makes approx. 19 cookies with a 2.5in. diameter and almost 1/2in. thick .
